How to turn a photo into toile

I am trying to turn a photo into a toile drawing / charcoal sketch on Illustrator. I can't really find a good tutorial on how to do that. Can someone point me in the right direction. On how to do this? Also, is Illustrator even the right software? I have never used an Adobe product before (other than Acrobat for reading PDFs).
