Illustrator 24.2.1 is changing my colors

This week after illustrator was updated it started to change my colors, I tryed with the following

• deleting the properties on the AppData folder (on Windows 10)
• uninstalling and reinstaling it
• looking into the color settings
• being sure that the file's color mode is CMYK

I don't know what else I can do, here is a simple test that I did

HEX only makes sense in RGB documents.

In a CMYK document only CMYK colors do not change, just like in your example.
