Illustrator CC 2021 crashing on launch

I'm using Illustrator 2021 on a PC with Windows 10 Home. 

Very recently, when I try to launch Illustrator, the startup graphic appears, then this warning pop-up:

"The operation cannot complete because of an unknown error [CANT]"

When I click "okay" on the warning pop-up, the startup graphic and the pop-up just disappear. 

I've tried uninstalling and reinstalling Illustrator from the Creative Cloud, but that hasn't helped. 

If I launch Illustrator straight from Creative Cloud, the same crash happens.
