I've been working on several Illustrator file for weeks now with no issues, then over the past week I started to notice colors becoming more vibrant. This morning I while I was working on this one file specifically, the colors suddenly changed to become vibrant and Illustrator's performance is now laggy. The best example are the attached screenshots. Both are of the same Tree Line JPG (which is supposed to be blue), just in different programs. The purple one is in Illustrator, while the blue one is in Photoshop.
Here's what I've done to troubleshoot the problem:
1. Ensured all files and documents are in CMYK
2. Copied artwork to a new CMYK document
3. Uninstalled Ai, then reinstalled it
4. Downgraded Ai to V 25.
Computer Specs
iMac Pro 2017
OS 10.15.7
Radeon Pro Vega 64 16GB
3 GHz 10-Core Inel Xeon W
That's what I suspected, there are multiple posts lately about this setting.
It seems to change to this automatically.
It turns off color management.
I saw one reply from an Adobe engineer Ashutosh_Mishra that may help:

Additionally, please try this workaround & let us know if it helps:
1. Lower Photoshop from 22.3 to 22.2.
2. Specify any color setting in Illustrator.
If you do the above
Even if you operate Photoshop while Illustrator is running,

Can you check your Edit > Color Settings...?

And turn on the info about your document profile at the bottom of your document window.

Well it came back pretty quickly. When I reverted the color settings back it didn't fix it entirely. The colors are still off.

And did your color settings change again to Emulate Adobe Ilustrator 6.0 ?

Yes it went back to the Emulate Adobe Illustrator 6.0.

That's bad, I hope Ashutosh_Mishra has other suggestions.

One thing to note is when this all happens, it switches from using the GPU to CPU causing Ai to perform poorly.
