Illustrator Crashing For No Reason

After years of using Illustrator I have to say the 2021 version is really disapointing and extremly unstable.

My experience is that it crashes unexpectly every 15 minutes or so. Besides this be ingirritating, it's costing me time and money. What gives Adobe?
