Illustrator Crashing on Start Up Every Time

I have had no issues with illustrator until a few weeks ago when it started crashing on startup (opens for a millisecond only) every time. I did some research and managed to get around the problem by allowing my mac to switch graphics cards as needed.  Unfortunately, the problem has happened again. I have ensured I have enough memory on my computer, cleared out old files, desktop files, I have uninstalled Illustrator CC, and reinstalled it but the problem still persists.  I have had Catalina OS since the OS was upgraded and from what I can read this causes issues.  As a design business (sole trader) I cannot afford to have this problem. Please help.

I've been having the same issue running Catalina 10.15.7. I reverted to an old version of illustrator and it started working again.

 

In case it helps:
In the creative cloud app I clicked "..." in the illustrator row and selected "Other versions", then clicked "Install" next to the
