Which version, which system?

Do you have any plugins installed?

Just updated the system or Illustrator?

At which point exactly does it crash?

So Illustrator does launch? It's just the files that cause issues?

Do you have a printer connected, set up as the default printer and turned on? If not, try and set up a PDF printer.
