Illustrator pen tool

In Illustrator, it used to be that you could add a point to a path, cut sections of a path, etc. Now I only see a pen tool and the other one is a curvature tool. All I want to do is cut part of a path without affecting the shape of it. Where are these tools that used to be in the sidebar?

Perhaps you're taking about the basic toolbar in recent versions.

Try Window > Toolbars > Advanced

 

Even with the 'basic' toolbar, the tools haven't gone away. Press C for the scissors tool (to cut paths), or + for the Add Anchor Point tool (though the default Pen tool does this automatically).
