Issue with large canvas: brushes and images being distorted

Hello,

I just downloaded the latest Illustrator 2021 and I'm having issues when drawing on a large artboard, 6900mm width. The brush strokes always runs out of the anchor points and it distorts the images when I copy and paste them or when I move them around.

Anyone knows whats happening? I've tried uninstalling and installing both version 24.3 and 25 but they seem to have the same problem. Any help would be amazing!
