My pen tool is "lagging"

I use a Macbook Pro (2018). I use illustrator every day and the program is very important to me. My "Pen Tool" is not selecting every single pixel. It skips over some of them. When I'm not able to select some of these pixels, I can't make any work.

At which zoom level are you working?

Are you working with either "Snap to grid" or "Snap to pixel" turned on?

The pen tool is not for selecting pixels.

Sorry. I didn't specify enough. When I, for example, set an anchor when I start off, it doesn't select the exact point I choose. Then when I set the next one I can see (From the rubberband feature) that it kind of "lags". It makes for some very unprecise anchors. It's absolutely impossible for me to make any precise shape. Is this some option I can turn off?

I am having a similar issue. I unchecked snap settings, but mine still seems to be having a problem.

When I double click and move my mouse after the anchor point will lag/skip and be wherever my mouse was. I am zoomed in anywhere between 100-400% and it works fine for a while then just starts up after a few hundred anchor points.
