Pathfinder outline tool - How to fix issue with outlining fonts?

Hello! I've been trying to use illustrator and the pathfinder tool is proving to be somewhat difficult to figure out. No matter what font I use I get these weird jagged block colour areas as seen above whenever I use the outline feature. How can I remedy this?

You may try View menu > CPU Preview to cure the issue.
