pathfinder text distract problem

Hi!
I have a problem with pathfinder/text. 
When i outline my text, and distract the outlined text from the blue background with pathfinder, a part of the 'DE' at MADE is being cut off. See below: Screen Shot 2021-06-16 at 10.04.37.png

The original outlined text - before trimming with pathfinder, looks perfect.

In stead of using Optima Medium, i tried using Optima Regular, but then other parts get cut off. 

Does anyone have any ideas how to solve this problem?

It unfotunately means that it is a bug with GPU preview in Illustrator. It may be quite frustrating, but it shouldn't affect your output.

Thank you so much for your answer, very helpful!
When i'm exporting the file to PDF, should i consider something particular with this issue? Or will it automatically save it itself correct when CPU Preview mode is on?
