I am trying to cut out text (I outlined it) from an object using the shape builder tool, but it gets smaller every time. Changes my letter type. Is that something I can avoid or is it just the way it works?

It's probably a different way of doing antialiasing.

If there's a white object, then that object is smoothed outwards.

If there's no white object, then the black object is smoothed outwards.

Can you share some screenshots of your objects before and after?

Is this a screenshot from Illustrator? What size are these objects?

Left is live text, middle is outlines, right is a compound path (what Shape Builder creates).

I can see a difference at low zoom levels. But there is no difference in the paths themselves. Put one on top of the other; they align perfectly. I assume this is a visual glitch.
