Text Styles Applying When Unwanted

Hello everyone. I've seen a preference toggle for this somewhere at some point I think, but can't find it now. Working on a product label in Illustrator and I have threaded text boxes. In different boxes I have different types of information that I want treated differently, but I'm finding frustratingly frequently, when I finish adjusting the point size/tabs, etc. and then go to treat other type, it's applying different styles to other areas of text I've already adjusted as desired. This is really frustrating, especially since my Undo states do not seem to be bringing me back to where I was before this automated style swap took place. 

 

Can anyone please offer some guidance as to why this is happening and how I can avoid it?

When did you last reboot the computer?

Does that happen in all files or just one?

Thank you for your reply. I'm using the latest version of Illustrator 25.2 on MacOS Big Sur 11.2, though this is something I've experienced through many versions of Illustrator. I restart my computer each day and yes, it happens in all files. As I mentioned, I believe I've found something about this in the past being some sort of "feature" or preference in Illustrator that I suppose somehow works like an auto eyedropper tool, but to me, its very uncontrolled and annoying.

I was trying to take a screen recording to show this but at the moment it is not doing what I tried to describe. I'll see if I can catch it in the act and post next time.
