Using the Pencil Tool after changing settings?

Hey all, apologies for the NOOB question.

I select the Pencil Tool. On the Stroke options, I change the Weight (making it thicker). The pencil works fine. When you change the weight AND the Profile, Illustrator does not seem to like this? ie, it reverts back to the default setting (the skinny look if you will). So, it seems when I want to increase the weight and profile, Illustrator won't allow me to. Am I missing something? Is this possible? Because I have to edit after drawing now.

Any help appreciated.

In the appearance panel menu uncheck "New art has basic appearance"
