I'm about to start an online course learning Illustrator CC. My machine has Windows 8, so will Illustrator CC work on this version of Windows or do I need to have Windows 10?

The current Windows version of Createive Cloud and its applications (like Illustrator CC 2021) require Windows 10 to run. I believe the same is true for the previous 2020 generation of applications.https://helpx.adobe.com/creative-cloud/system-requirements.html?promoid=P79NQR4R&mv=other
