I'm trying to place and link an Excel spreadsheet to an InCopy table. Adobe Support available at the following link ...

InCopy Help | Creating tables

states...

"If you want to maintain a link to the spreadsheet, select the Create Links When Placing Text And Spreadsheet Files option in File Handling preference settings."

Although this Create Links option is available within the InDesign edit preferences dialog box, it is not available in the InCopy dialog box.

I'm using InCopy 2017.0 release on a Windows machine.

This isn't of much help, but I think the simple answer is that InCopy doesn't have the ability to do this and it must be done in InDesign before it will work in InCopy.
