Welche Einstellungen muss ich beim Farbmanagement vornehmen, wenn ich ein InDesign-Dokument auf einem Epson XP 7100 auf Normalpapier bzw. auf Epson Premium Glossy farbgetreu ausdrucken will?

First, export to PDF. Second step: print from Acrobat Pro. Be aware that color management can be done from both the Print dialog box as well as the secondary print dialog box from the Epson printer. Do color management from one or the other; but not both.
