I want to place all my endnotes in my book in a separate chapter (or document) at the end of the book (not at the end of the document).

At this point in time, endnotes can appear at the end of a story or at the end of each chapter. You are not alone in wanting them at the end of the book: https://indesign.uservoice.com/forums/601021-adobe-indesign-feature-requests/suggestions/37165906-en.... You can vote up the feature request by logging in with your Adobe ID and clicking the vote button. 

 

However, one of our moderators, Peter Kahrel, has a number of footnote and endnote scripts, including a footnote to end of book notes script. See https://creativepro.com/files/kahrel/indesignscripts.html. If a script works for you, consider a donation using the link on his page.
