I have a long document that someone else set up that I need to work on. The have a color throughout the document that needs to be changed. Previously, I have asked them to set up the color as a swatch so it is easy to change but they have not done that. Is there a way to search for a color that HAS NOT been saved as a swatch and change it? A greph search or something?

In the Swatches panel menu, choose Add Unnamed Colors. You can then use the Color tab to find and change it, or edit the swatch.
