Hi,
Here's what I want to do. I want to write a basic text where I can change some sections by accessing a cvs file. I want the final text to look like... eh... a regular text!
Since the letters are very long, I will make individual CVS file for each one of them.
Here's an example :
Dear "CVS", I would like to thank you for your "text chosen from a roll down in a CVS file" to our project. The next step will be "text chosen from a roll down in a CVS file" scheduled "text chosen from aroll down in a CVS file". We will contact you at "CVS" ""text chosen from a roll down in a CVS file".
So, depending on the CVS file I use, this could output as :
Dear M. Smith, I would like to thank you for your outstanding contribution to our project. The next step will be a Zoom meeting scheduled somewhere in April. We will contact you at m_smith534@gmail.com to grant you access.
Is there a way to do this in InDesign?

Will you be needing if/else logic on these letters?

No, only inserting little phrases on a template text.

Of course, data are imported from a CSV file, not from a drug store! Haha
