Try it out and enter the following combination:
'test'- abc
Now delete the space before the abc once
No matter on which Mac, InDesign crashes immediately when removing the character!
Using Bib Sur on latest InDesign version and
Mac Mini i7 Late 2020
Mac Pro 2015
iMac 27" Late 2016
Could be a bug with InDesign 2021 version 16.0 and 16.1.
One factor: Language "German" is applied to text.
The character sequence -xx'-x crashes InDesign 2021 (v 16.0) on Mac

Yes.
No matter what font you are using.
It seems like a bug of InDesign.
A couple minutes before I tried by using anydesk on a Mac from a friend and it is the same problem.
Also it looks like that the problem is existing since some versions now. It's not just in the latest version of ID

I am on Catalina, not on Big Sur. I have pasted your text in a 2020 and in a 2021 document. Unable to reproduce the issue.
