Merci d'avance

All files are affected - including a blank, new file?

Can you try IDMLing - export as IDML, open, save with a new name - do not overwrite your original file.

Yes, all files are affected, even a blank new page.
Sometimes, it even stops working when i'm still on the indesign "home page".

I'm gonna try your suggestion

I did it and it still wont' work properly. Indesign stopped crashing but it
is still lagging every five minutes...

I also tried to uninstall and reinstall the app, didn't do anything

You mean it stopped crashing after resetting preferences?

There is a "nuclear" option - CC Cleaner - described in the link I've provided.
