I have been trying to make tables in Indesign to import to illustrator as I thought it would be easier to get precisely spaced columns and rows. Whenever I try to edit the cells fill/stroke, contents, font, scale etc the whole table disappears and becomes uneditable leaving just an empty frame or nothing in some cases.
There is noting particularly unusual about them, very standard tables with a colored fill and stroke and some text.

I'm trying to understand where the disappearance of the table occurs - in InDesign? after you place it in Illustrator? Did this just happen just one time in one file, or is it something you can replicate in another file/ Also tell us mour about your system: Please tell us what operating system (exactly) you're running. Please tell us (exactly) what InDesign version you're using. How you you or did you save the InDesign file to place in Illlustrator?

It occurs in Indesign. I've not had any issue just copying and pasting the successful tables across at all.
I am using the latest Ind CC update and running Monterey 12.5.1
I have a new file and same thing keeps happening.
I understand that changing the dimensions beyond the bounding box will make it look like it has disappeared, but for changing the colors etc it seems very odd
