Is there a way to assign 3 different colors to my Check Boxes so the user and say, this box is green, this one is yellow, this one is red. I was asked to create a document that will be filled out by a user; there will be multiple boxes for the user to check off but they also select what color they need to be. It was requested that the boxes be color-coded based on the status of the option. I'm not seeing a way to do this.

You can edit the color of objects and check boxes using the direct select tool (the white arrow), or you can change the button properties in Acrobat using the Prepare Form tools. Can you explain in greater detail what you are trying to do? Are you asking for the check boxes to change color based on a user selection? That could possibly be scripted in Acrobat, or you could use layer visibility controlled by a button, here is a link to a related discussion:

They want a way to let the form filler to select which color the check mark is. I think this will work, but I wasn't sure about how to go about it. Thank you, I will give this a shot and hope that it works for the requestor.

The layer visibility idea would only be useful if you want to select the color for all check boxes (see attached sample pdf). If you want the user to select the color for each checkbox, the best option would probably be a separate check box for each color, you could also ask your question over in the Acrobat forum.
