Is there a way QR code update it self, as I change the SKU field text box?

Not really. You can use data merge so that all the data in a record is updated as one operation, and can of course edit the QR code within ID's feature, and there are surely scripts and third-party automation that could be added... but simply, within ID's feature set? No.
