How can I have my copywriter edit the text as I work in InDesign and have it updated in InDesign?

But you can' have an InDesign file open at the same time by 2 different people.

Just to clarify that, the InDesign file cannot be open by two InDesign users at the same time. It is okay to open the InDesign file directly in InCopy to make edits while the InDesign users is working on the layout.

But it opens up as a wierd doc file.

That's not InCopy, it's note pad. This is not something you're likely to be able to do without some training or at the very least some in-depth reading. Your co-worker will have to get an InCopy subscription which is only $5/month.
