Why is it that when I go to the A-Master page to turn my page numbers to outlines they all turn to A, and how can I fix this?

1. Because the second you convert to outlines the page number (or any text for that matter) no longer is text. And "A" is just a text variable which get replaced on each indivdual page. As soon as you convert that's no longer possible.

2. Don't convert to outlines. Why would you?

Because I'm sending the file out and the publisher may not have the fonts.
Unless a print ready PDF automatically embeds them?

Just wanted to add:
PDF doesn't necessarily mean fonts get embedded all the time.

Yes, if you export to a PDF/X standard it is a requirement (hence standard) that all fonts MUST be embedded. If the font designer for some reason disallowed that embedding fonts is possible you will get a warning on export since it's no longer PDF/X-compliant.
So it's always a good idea to export to PDF/X for print.

As far as I know it is impossible in InDesign to export without embedded fonts, PDF/X or not.

But what other applications do might be completely different.
