Recently, I get this occasional colour explosion on a page I'm working on. Like most of the spread goes one colour, and there's giant gradients covering the page. Sometimes they disappear when I hit "W" but come back when I hit it again, usually only on one spread of a larger document. Sometimes I can jump up a few pages and back and it's gone, sometimes it's still there. If I close the doc & reopen it's gone. Doesn't seem to affect anything permanently, but a pain in the butt nonetheless.

I get that too - GPU artifacting. I assume you are on a Apple machine.

Yes. So it's a known thing? Nothing to worry about?

Make sure your computer is up to date with drivers. I was on Big Sur, but I am now on PC to avoid the countless reliability issues on the Mac.
GPU artifacting could be a driver/software issue or the hardware may be failing.
