Dear Friends, I need to make an approximately 12-page document to raise funds for an independent film. It will include photographs and text and probably some artwork (of mine). I am listening to David Blatners fine tutorial, but am unclear which kind of new document I should start with - Print, Web, or Mobile. The finished document will be mostly viewed on screens, but I also want to be able to print it. Can anyone advise me which is best for my project? Many thanks.

start with Print, you can convert or export or publish to Web or Mobile later ( if that is necessary at all ).
If you place images, leave them in RGB color space with ICC color profiles included. Do not convert them to CMYK before placing them in InDesign.

Create it for print (and don't forget to add bleed to the the trimed page size – 3mm) and you can produce a PDF from the print version for your digital eedition for viewing on screen.
