Indesign 2020 (15.1.7) freezes under OSX

Indesign freezes and pushes the CPU far over 100%

How it happend (as I presume):
Deleting Caches and Logs on the Mac

What I did already:
Deinstalling nearly everything, reinstalling, no fonts installed, no plugins ...  does not help
No firewall, antivirus or anything else active (checked via terminal and ps)

Trying to rename CEP and UXP, nothing. ..

Trying to chmod cache and logs folder to 777 .. doesn't help.

What helps some time:

Restarting in protected mode, starting ID (it works). Shutting down and normal reboot, 
starting ID: runs for 2 to 5 hours, then freezes.

Other Adobe products:

Illustrator, Photoshop ware working as expected


I could use the 2021 (which works), but that means that I have to upgrade some plugins during a running project (which I do not like very much...)

Any ideas are very appreciated. Maybe an issue with wrong permissions in cache or logs folders

LATEST

update: the ID 2020 runs only after a protected restart then normal start. Then only once. A second start freezes the program.
