Just a question, actually might be a preference.
I am building a E catalog which is better building it 8.5 x 11 in indesign as print design (settings 8.5 x 11) or should I
Use web setting in Indesign which are 612px x 792px which is the equivalent of 8.5 x 11
Or it doesn’t really matter

If you're building a reflowable ePub, the page format really is irrelevant. Still, to make things easier, I'd choose the web setting.

The Intent you choose in Document Setup only affects the document’s initial setup—with Web the default colors, swatches, and Transparency Blend Space start as RGB, and the Ruler Units start as Pixels. But ID lets you mix color spaces—there’s no Document color space—so it doesn't matter except for the setup convenience.

As many such documents are viewed on a tablet and smart phone, you might consider a smaller page size than 8.5" x 11" for your PDF.
