Here are a few options you can try:
First, disable GPU in preferences, any difference?
If not, try resetting your Lightroom preferences:

Quit Lightroom Classic.
macOS: Press and hold the Shift + Option keys.
While holding down the keys, launch Lightroom Classic.
When asked, select "Yes".

The first thing - disable GPU - seemed to make it work again. Should I just leave that setting off permanently? Is there any downside to leaving that off?

If turning OFF GPU works, it's a GPU bug and you need to contact the manufacturer or find out if there's an updated driver for it. This is why disabling GPU is an option as more and more functionality moves to the GPU in newer versions of many Adobe products.
