Lots of UI issues right now with LRC. Copy and Paste Settings, Paste from Previous... under both Edit and Develop Settings is disabled/greyed out. I can't see the Loupe Info Overlay at all. It's basically becoming unusable as an app, especially since I can't see any of the shot settings.
I've tried resetting prefs, didn't work.

Did you reset them (using the key combo) or delete them. If you used the key combo, then try deleting them. That is more thorough and sometimes makes a difference.

I tried it first through the UI and then actually removing the plist from the preferences folder. No luck unfortunately.

If using a brand new catalog fixes it, then what you can do next is import the old catalog into the new one. With a little bit of luck this fixes the problem and retains everything you did in the old catalog.

Here’s a quick troubleshooting guide:
First, make sure both Lightroom Classic and macOS are up to date. You can update Lightroom via Help > Updates.
Next, create a new catalog via File > New Catalog and test if the issues persist. If the new catalog works, optimize your current catalog by going to File > Optimize Catalog.
To reset preferences, delete the Lightroom Classic CC Preferences.agprefs file from /Users/[Your Username]/Library/Preferences/Adobe Lightroom Classic/Preferences/ and restart Lightroom.
Then, go to Preferences > Performance and set the GPU to Off, then restart Lightroom.
Check if the Loupe Info Overlay is enabled by using View > Loupe Info Overlay > Show Info Overlay or pressing I.
If the issue continues, uninstall Lightroom via the Creative Cloud app, clear any remaining files, and reinstall.
If nothing works, report the issue to Adobe using Help > Provide Feedback.
