In that screenshot of your Develop Module, you have the optional HDR button selected. THis allows LrC to display in HDR mode. This is available for users that OS can support HDR, who's GPU can support HDR, and who's monitor can support HDR.
Not to be confused with Photo Merge HDR.
As for the export. How are you viewing it?

In your Export screen, in File Settings, did you check the HDR Output box?

Yes, the 16" MacBook Pro can display in HDR. However, whether you see HDR on the export depends on many things:
Which file format options did you select when exporting?
Which application are you using to view it, and is that application fully HDR-compatible?
Are you viewing it in a web browser? Currently, the ability to view HDR on the web is very limited; it works only if very specific combinations of web browser and file formats is used.

Specifically, review the section of the article under the heading “Let me show it to the world!” It talks about the limitations of viewing HDR outside of Lightroom.
Also, keep in mind that even inside Lightroom Classic, you see it in HDR only in the Develop module. All other views — including Loupe view, and Window > Screen Mode > Full Screen (F key), do not display in HDR yet.
