I have a canon eos R. I am struggling to edit the new CR3 files - they look horrible in LR. I tried the color fidelty custom profiles - not crazy about those either. Is there a way I can have my images from that camera (eos R) look like my images from my canon 6D when imported into LR? If so....how do I set this up?!! I was told by someone that I could make a custom profile to match cameras but they couldn't tell me how to do it... PLEASE HELP!!!!!!!!!!!!!!!

"IF" you are referring to establishing your own defaults specific to your camera with settings that you choose, you might appreciate the following video that I found to be quite helpful. If you are expecting to force this model to perform like a different model then that is a different story altogether.

If you were using the Adobe Standard camera profile with your Canon 6D raw files then the following may be the reason your Canon EOS R files don't render the same.

The Adobe Standard profile metrics were "silently" changed by Adobe sometime in Q3 2014. All camera models introduced since Q3 2014 have Adobe Standard profiles with lower color saturation. The below link provides more details and instructions on using the Adobe DNG Profile Editor to create an Adobe Standard camera profile for your EOS R raw files that matches the 6D.

Below is a calibration test shot using Adobe Standard camera profile that demonstrates the issue. The Canon EOS 6D is on the left and EOS R on the right. The difference in rendering is pretty obvious.

So, I went and downloaded a sample Canon EOS R RAW file. I obtained it from:

https://drive.google.com/drive/folders/1-ZoYTZlIOqkNJSXUrGPES_OWEBinD_cq

file name:

273A6915.CR3

Imported that file and brought into Develop. I am able to slect some Camera Matchng Profiles.

Have you tried that?
