Hello,
I’m a real estate photographer, and I usually rename my files using my name after uploading them. I have to do this manually every time, and sometimes I make mistakes when I forget.
How can I set it as the default? Right now, it uses the capture time by default.
Additionally, the biggest issue is that Denoise in the background still hasn’t returned after the latest update, which I’m quite disappointed about.
Please update me about both issues if possible.

Are you using Lightroom (Lr icon) or Lightroom Classic (LrC icon) or something else? Please also tell us the version number.
If you are talking about Lightroom Classic, you can set the files to be autoamtically renamed at import, if that's what you want to do (although it's really not clear to me what you really want to do). https://helpx.adobe.com/lightroom-classic/help/filename-template-editor-text-template.html
AI DeNoise in the background will not be returning to Lightroom Classic.
Your title talks about sorting, but then it is not mentioned again, so I have not commented on this matter.

Hey there, Thanks for your reply. I’m talking about LrC not renaming, but sorting files in the View section after importing.
It’s really disappointing that background Denoise is still missing. It used to save a lot of time for us. For example, I denoise every drone shot, and before, I could do that while editing the ground shots at the same time. Now I have to stop and wait, and it’s quite slow sometimes.

@dj_paige, this way is not gonna help me.
Because I have all shots as different folders but in the same catalog (master catalog).
So they're saying each folder/catalog has to be set at once. which means i have to do every time.
