I noticed that LR changed after Nikon Z9 Firmware Update 2.0. Especially the values Texture, Clarity, Sharpening Radius, NR Luminance, Detail. What did Adobe do here again?

The Nikon Z cameras write camera settings in XMP directly to the raw files.
Lightroom understands XMP, and will set the sliders according to the settings in the raw file.
So if you don't like the settings, you'll have to change them in the camera.
I prefer to start with an unedited image, so I have zeroed out all camera settings in my Z7.

Can you compare the Z7 with the Z9? I think these are different cameras with different specifications.

Before the firmware update, the values matched. Now these are very different.

They are different cameras, but that's not the point here.
Both cameras create XMP settings that will transfer to Lightroom.
The article you linked to is very informative, and tells you a lot about how the various camera settings work on the Z9.
If you want images to be imported with a particular combination of settings, you can create a Raw Default for the camera as a preset, and have that preset being automatically applied on import.
You do this in Preferences > Presets.
