"Graphics Processor Info: DirectX: NVIDIA RTX 2000 Ada Generation Laptop GPU (31.0.15.3892)"

That graphics driver is a year old. Update to the most recent Production Branch/Studio driver here:

https://www.nvidia.com/en-us/drivers/details/252611/

If that doesn't help, then follow up in the Lightroom Ecosystem forum, as indicated by dj_paige.

"Operating system: Mac OS 14

You're likely tripping over a buggy graphics driver for the AMD Radeon 5000-series GPUs released by Apple in Mac OS 14.4.1.   Most people got screwy visual artifacts in LR, though there were some reports that other AI commands didn't work.

https://community.adobe.com/t5/lightroom-classic-bugs/p-gpu-develop-edit-view-amp-export-artifacts-a...

Some have reported that upgrading to Mac OS 15 fixes the issues, while others have said it doesn't. You could also try restarting your computer -- that has temporarily fixed the problems for many, though the problems always come back.

@Crazywabbitt, please do the LR menu command Help > System Info and copy/paste the entire contents here so we can see exactly which versions of hardware and software LR thinks you're running and important LR options that are set.

I am also encountering the same problem, although I'm not using a mac and my GPU is an Nvidia RTX 2000 not an AMD.  I've experimented with adjusting the GPU acceleration settings (including turning it off entirely), all to no avail.

I'm running Lightroom 1.41.0.11 - and this only started recently, so I imagine its a bug in the new version.  If anyone has a thought about how to address this or work around this, I'd be very grateful.  Don't get me wrong, masking out my subjects by hand using the brush tool is lovely therapy, but not something I'd prefer to continue doing indefinitely!

Strangely enough, the sky detect tool works flawlessly!

You are in the wrong forum. Lightroom 8.5 is not Lightroom Classic, but this is the Lightroom Classic forum. Please post in the Lightroom (ecosystem) forum.
