LR doesn't do this automatically -- when the metadata stored in the .xmp sidecar (or, for non-raws, in the photo file itself) has been modified since the it was last imported into the catalog, you need to give the command Metadata > Read Metadata From File to tell LR to read the new metadata into the catalog.
The metadata status indicator in the upper-right of a thumbnail changes to indicate that the on-disk metadata is newer than what's in the catalog:
You can use the Metadata Status column of the Library Filter bar's Metadata browser to find all such photos:

Instead of copying photos and .xmp sidecars between the two computers, you might consider File > Export As Catalog and File > Import From Another Catalog, which gives more flexibility about how you transfer photos and their settings and could help you avoid mistakes.

Thanks John, but I think there may be a problem with this because there is a limitation of Lightroom's permissions for copying between computers on a wireless network - I recall having had such an issue some time ago, but I forget the details. Anyhow, I could try again as you suggest.

I just tested, and File > Import/Export As Catalog work with network volumes. I recall that they didn't used to, but they seem to now. But if you run into issues, you can export to a folder on the local disk, copy the folder to the remote computer, and import from there.

Thanks for trying that John, much appreciated. I shall give it a go. But first, I'd appreciate if you could advise whether "Import/Export As Catalog" means my whole catalog gets transferred, or only the photos I selected for tranferring, and having done so, does this create a new catalog on the receiving volume, such that I would end-up with multiple catalogs, one new one for every batch of photos I export from one compouter to the other? If so, that sounds like laying the groundwork for eventual chaos - unless I keep merging them all. Perhaps most important of all, are there any image edits I perform in Lr's Develop Moduole that are only recorded in the Catalog and not in XMP?

1. From the sending catalog, do File > Export As Catalog and select the photos you want to include. Export the catalog to a location on the receiving computer.
2. In the receiving catalog, do File > Import From Another Catalog and select the exported catalog.
3. Choose the desired options for where to place new photos and how to handle metadata of existing photos.
4. Delete the exported catalog.
You can send any changes back in the other direction without sending the photos themselves, and Import From Another Catalog will update the receiving catalogs with the changed metadata and develop settings.
