I'm using the most current version of Lightroom Classic 10.1.1 & have a MacBook Pro with Big Sur.
Skin tones are now very red - only when printed.
I've printed the same portrait in InDesign & as a pdf & the color is fine.
The file is a jpg. I also tried printing the original file - same result - red!
And, tried a few other files from other folders, again the same result.
What is going on?
The printer is an Epson P800.

Is your monutor calibrated? What is the color profile that it is using? It likely changed from what you had before the update to Big Sur.

You should always test output using good color reference images designed for that task. The color reference images RGB values are such they are set for output and are editing and display agnostic. Test the output this way and examine for the same color issues so we know it's not your image specific issues causing the problems:

IF you find this only happens in LR, start from scratch and make a new Print Template with all the settings correctly configured and try once again.
