I'm using Lightroom Classic on the latest Mac Ventura beta. When I switch from Library to Develop mode, the image's saturation changes completely, with much less saturation in the Develop mode.

Posting 'bug' reports about Lightroom running on a beta version of MacOS is pretty useless. The current version of Lightroom is clearly not designed to run on this MacOS version, and it goes without saying that Adobe is testing it as we speak, so it's fairly certain Adobe knows about this issue already. You don't even know if this is a Lightroom issue or a MacOS Ventura color management issue. It's better to wait till both are officially released before you give feedback like this.
