Where is the edit data of photos that I sync from Lightroom on iPad to Collection in LR Classic on MacOS stored?

Are they in the main Lightroom Catalog.lrcat?

Yes, all edit data are stored in the catalog. And also in the sidecar files if you have that option enabled.
