When I try to use white balance and crop in Develop it hangs, beachballs and then I wait for the inevitable restart. Three times now.

Please post your System Information as Lightroom Classic (LrC) reports it. In LrC click on Help, then System Info, then Copy. Paste that information into a reply. Please present all information from first line down to and including Plug-in Info. Info after Plug-in info can be cut as that is just so much dead space to us non-Techs.

Following some other threads here I tried turning off Graphics Processeor Acceleration: Preferences>Performance>Use graphic processor

I believe you are running a "beta" of macOS the release version is MacOS 11 Big Sur, maybe you should try an upgrade though the Creative Cloud App take care and read the information carefully.

Thanks for the input DdeGannes. This problem started before I upgraded to Big Sur and after that upgraded LRC to 10.1. What's puzzling is I'm running Mac OS Big Sur 11.1 (as shown in Apple>About This Mac). However, when I get the Lightroom report in Sys Info it shows I have Mac OS 10 (10.16.0).
But anyway, the problem I'm having now predates these upgrades. I did the upgrades hoping they would take care of it.

May be a good idea to power off your computer and reboot after the system upgrade.

Oh, yes, done that several times, and even uninstalled an reinstalled LRC a few times. Maybe after another update it will work with the GPU on. I'm not really noticing any lag or negative effects from it being off.
