Regarding the missing Camera Matching profiles, you can download free profiles that are a reasonably good subsitute for the missing profiles for all CR3 based cameras at https://www.jimmynordstrom.se/showpost?id=83 yellow/oranage are a tad hot, but dialing back the saturation seems to be solution that others have settled on.

It seems that Adobe has stopped developing camera matching profiles for Canon EOS cameras almost three years ago. None of the EOS cameras after the original EOS R has received a matching profile to this day. That list includes:
When it comes to lenses, I haven't understood Adobe's strategy yet: While the brand new superteles are already supported, the RF 50mm f/1.8 STM and the RF 70-200mm f/4L IS USM for some reason are not.
