When will adobe support the Canon R5 CR3 format? Suppport should be day 1 or before. I am sure they have had example CR3 files from the the R5 for a long time. This happened with my 5D Mark IV and I did not have that day one. So annoying. I already downloaded the DNG Converter to try and work around the issue.

This is a community forum for fellow LrC users. Very few Adobe Techs visit it. And as non Adobe , we have very little knowledge as to when Adobe will get around to publishing updates or upgrades, and no knowledge if a particular camera will be added to supported cameras. Neither in LrC, Lr, or ACR.
Now that being said;;
Apparently a Beta Release of Adobe DNG Converter xists that adds your camera to supported cameras, and you may download that and give that a try.
As Adobe is working on a DNG converter, they are probably working on a new version of Adobe Camera RAW. and after they get that correct, they can code it into LrC, one might assume that the next update of LrC, whenever that may be,
maybe, cross fingers.

You should really address your comments to Adobe.

Your other choice could be to wait until Lightroom is updated to support the camera model before you purchase. I see these types of complaints every time a new model is released between Lightroom releases. It's a natural cycle of frustration, and it's one that has to be dealt with. You can't change it, Adobe can't change it, and complaining about it and blaming Adobe isn't going to accomplish anything. Since the DNG converter Beta version supports it, it most surely will be supported in the next Lightroom update.

They have had R5 CR3 files for a long time. That’s how they were able to release a beta DNG Converter. The beta is evidence they started working on it as soon as they could. They could have simply said “sorry, wait until final,” but they provided something to you.
Like many other software companies and product reviewers with integrity, they refuse to call it “final” based on a pre-production camera. When the final production camera ships, they grab one as soon as they can, verify, then after any new issues are ironed out then they almost ship. I say “almost” because there is not a separate update for every single camera and lens that comes out.
There are many new cameras and lenses constantly being released, so Adobe collects all the new profiles for the latest cameras and lenses (which can be a long list), and does a release every three months or so. So the other reason you don’t get an update on day 1 is because every new camera and lens gets to go on the next collective release, but not until then, kind of like waiting for the next train to leave.
The only exception is when a camera like the R5 is so important that they choose to release an advance beta of the profile. You got that.

Since the camera makers also make editors, they all consider Adobe and the other software makers to be competitors. Thus Adobe does not get any notices or or examples of upcoming cameras nor their file formats beyond what the general public gets.

Jkal Suppport should be day 1 or before.
And if camera manufacturers would either stop making silly changes to every new proprietary raws (notice no issue with the camera JPEGs) OR at least provide Adobe and other's a raw prior to release, you'd get that wish. The camera manufacturers don't. So rather than complain to Adobe, you should complain to Canon who took a good deal of your money, then held up YOUR data (the raw) hostage. It's all their fault in this mess.
