Salve quando vado ad aprire una foto in RAW con Lightroom, si dovrebbe aprire una camera raw oppure si apre la stessa schermata di Lightroom come fosse un file in jpeg?

There's no difference in the way Lightroom Classic handles JPG vs RAW, the difference is in the photo file itself. So, in my opinion, you don't need to separate RAW from JPG in any way.
