I am very begrudgingly being forced into subscription based use. I am (was?) a LR5 user, but Apple iMac OS updates have made it very unstable. So I look at the Adobe site and apart from 20GB Vs 1TB, the key difference in plans appears to be one with LR and the other with LR AND LRC. Are they trying to confuse things as they do not define this?
AND with High Sierra OS on the Mac, any advice on the Adobe subscription in terms of conflicts with current version vs. that OS?

Confusion abounds- don't think you are the only one confused by the non-sensical naming of the Adobe software.
As a LR5 user the logical upgrade is to subscribe to the PHOTOGRAPHY PLAN (20Gb).
This gets you Lightroom-Classic (v10.1 the latest upgrade from your v5), Photoshop 2021, Adobe Bridge, and access also to all the 'Cloud' versions of the 'Lightroom family'.
You will install Lightroom-Classic using the Adobe Creative Cloud Desktop App.
Open Lr-Classic and your current LR5 Catalog will be saved (for backup) and a copy of the catalog upgraded to work with the features in Lr-Classic10.1
Then carry on! All your LR5 work will be in the new v10 Catalog. (If not- then it upgraded the wrong, or an old, catalog! Search for the 'correct' one.)
As you learn about the 'Cloud' software you can install it on iPhones, iPads, etc. And Lightroom-Classic can sync selected photos to the Cloud that do NOT occupy any space of the 20Gb storage in the plan. Lots to learn!
(Do NOT subscribe to the "Lightroom Plan"!- This will NOT give you an upgrade road from LR5.)

Lightroom Classic 10.x (current version) will not run on High Sierra. Requires Mojave, Catalina or Big Sur.

Many MACOS users have big problems with LrC v10.1. This for multiple MACOS versions, multiple types of MACs. Typically they need to roll back to LrC v10.0
You will have to find out if that is a problem on your rig.

One special group of MACOS users with much much bigger issues are those new owners with M1 MACs. Adobe not very ready on LrC yet for them, very slow.
So separate out problems M1 users have from non M1 users.
