Many MACOS users (multiple MACOS version) are having issues with v10.1. This is not an absolute.

Try rolling back to v10.0

Although many have seen Lightroom Classic run some things faster on an M1 Mac than on an Intel Mac, the fact is that Lightroom Classic is not yet optimized for M1 Apple Silicon, so it is not yet running at its full potential speed on Apple Silicon.

After Apple Silicon Macs were released, Adobe announced that “native compatibility is planned for 2021” for Lightroom Classic, but that fully optimized version is not yet available. Lightroom (non-Classic) is already available as a fully M1-optimized application; but we are still waiting for Lightroom Classic, which contains a lot more older code to modernize.
