What OS can I upgrade my Mac Book Pro to and still run LR6 without any issues?

Mojave. Apparently Lr 6 will run on Catalina if it was installed on a previous version OS and upgraged to Catalina but the uninstaller and installer wont run on Catalina.

LR6 runs on Catalina but only if it has been previously installed on an earlier operating system. You cannot install or re-install LR 6 on Catalina.
